I have heard there is a lot of paperwork you need to have what does this involve

Have I missed something? your post is a bit vague, paperwork for what exactly?
apparently there is a lot of red tape, I don't know this is only what I have read, ie: when you buy a property you have to have copy upon copy of copies of all transactions. then visits to the major and town hall authorities for permission to live in Spain and to prove your income is enough to live on. it all sounds quite alarming really.

Your solicitor will sort most things out for you, yes there is a lot of paperwork and if you're wanting to live here permanently you will need residencia for which you will need proof of medical cover, don't let it put you off though it's a lovely place to live, well in my opinion it is.

Paperwork for what? Lots of information about living in Spain can be found on the CAB Spain website
Just think you are a baby and the paperwork starts then and in spain you start as a baby well all most.
