Can you let me know the best route to take (I have a dog) and recommend where i could stop overnight on the route

I travel down the route that Google Maps gives you for Toll Free roads. I stop at Le Mans and Bayonne which makes it a three day journey. There are long stretches of good toll free motorways and areas of great scenery off the main roads with plenty of towns and villages to stop in and refresh.
I can send the details of the route and the hotels I use if you want.

The above is the route avoiding tolls. The route includes the trip through the tunnel underneath the Pyrenees. Depending on the weather you can use that route or if the weather is bad, detour via Bayonne and go around the highest of the Pyrenees and avoid potential snow. If the weather is good, I've stayed in Pau in the past rather than Bayonne.
This is the Hotel I stay in in Bayonne. It's on the main road through , is cheap and is pet friendly. Oh and its comfortable if not a little basic.
This is the Le Mans hotel. Again. Well positioned for the roads, comfortable and cheap with pets allowed.
Finally the hotel in Pau. Same qualities as the two above and again, pets allowed.
If the weather is bad and you go via Bayonne, the route does include tolls but there is only one toll both at the French Spanish border and the charge is less that 3 euros. For this route pout of Bayonne, follow the motorway signs for San Sebastien and then the directions towards Pamplona once you're across the Spanish border. Once you go around Pamplona, the route goes via Zaragoza towards Valencia and down to Murcia. I suggest for the detail you use Google Maps or your car sat-nav which you can set to avoid Tolls or not as the case may be from Bayonne.

Go into Google maps, enter La Torre into the search box then press directions and it should give you the route. Make sure you go into Options and untick all the ‘avoid’ options. You can choose the quickest or the shortest which aren’t always the same route. Good luck and a safe journey.
