"Policies tend to cover any driver over the age of 25 years." Be careful that usually the driver must have held a full licence for 2 years - read the small print.
If you come and go remember to allow for costs of airport garaging (c. €350 per year for unlimited coming and going), ITV (depending on age of car) and servicing. The date when ITV is due may not be when you are here to take it.
It does work out as a saving but you have to do all the math!

In regards to the cash prices shown, is that what you would pay to drive away or is there some Spanish Vat or tax that would be lumped on?

That should be the ‘drive away’ price, but you can also haggle as you would in the UK.
On the road tax point - whoever owns the car on 1st January each year pays the tax for the whole year, so if you bought a car in July it would be taxed until the end of the year.
