To anyone whom has traveled lately to Spain we are having difficulty filling in the health form, do we choose EU vac or non EU and we seem to be hitting a brick wall as telling us both are not valid for travel

Assuming you mean the Passenger Locator form you choose the appropriate vaccination, depending on where you were vaccinated. If in the UK then it is non-EU.
You will not be able to fill in much of the form until there are less than 72 hours before you are due to arrive.

All I get is that the form is not valid when I enter all my vaccination details

Are you using the form from https://www.spth.gob.es ? If so do not tick the box for international transit.

I believe you can only complete the PLF within 24hrs of your journey.
My husband was vaccinated in a non EU country and was able to complete his PLF for travel a couple of weeks ago.
