As you have applied for residency, you are in the system, so you should not worry about the 90 day rule, but make a copy of your appointment. Now as for travel back to the UK you may find it difficult to return to Spain as I feel just having a appointment will not be enough reason to return to Spain.

I very much doubt that you would be fined. However if you leave Spain and go to the UK you may have a bigger problem of not getting back into Spain. I would stay put, there are plenty of Brits still living under the radar and I'm sure the authorities would rather fine or kick them out first.
