This is not easy and a very costly process, besides the cost of a store you have your monthly "Autonomo contribution" which is like being self employed in the Uk. 

If you want to employ anyone even if it is for 2 hours a week they will have to have an employment contract (even if it is a member of the family) again paying a contributing to the Hacienda.

I am saying this from experience having owned and operated 4 businesses here in Spain.

I do however wish you luck if you do decide to go further with your business.
