Living in Spain for a Year

Ignoring the Brexit fiasco, once you have been in Spain for more than 183 days in a calendar year you are tax-resident, and must pay taxes in Spain on all your world-wide income. This is Spanish tax law, nothing to do with the EU. The only difference that the UK not being a member of the EU will make is that your arrivals and departures will be more formal as you will not pass through the EU citizens portal at airports and ports - land borders are like so much else to do with the mess as within Europe there are effectively none at present.

Thanks for that. Would it be my responsibility to contact the Spanish authorities to advise income details or would that be taken into account when registering for temporary residency?

I suggest that all the complications of residency and tax should be carefully considered, and weighed against whatever makes you want to spend a year in Spain. Take some professional advice, as it could prove a very expensive long holiday. For example you may choose to arrive on the 1st of July and leave before the end of the following June, thus passing less than 183 days in each year....

You will have to register as foreign residents as you intend spending more than 30 days, but will need to show that you have qualifying health care, and funds to support yourselves.

Take professional advice, and do the research.

Many thanks for your information, its much appreciated. Would you know when a Spanish Tax Return would be due if we took up temporary residence in Jan 2020 and what income would be considered adequate per person?

It would be better for you to obtain legal advice. Not necessarily obtain information from an open forum. Then if anything goes wrong,  you will have redress to your advisor
