Looking ahead Gas is going to be phased out, just as Pellet burners will have to be, in favour of much more environmentally friendly electricity.

I would thoroughly recommend a gas boiler only heats the water when required and a bottle of gas is comparatively cheap compared to electricity at 18,63 euro a bottle,
I cook with gas on a full double oven as well as heating the hot water with a modern gas water heater (no permanent pilot light) a bottle normally last me about 42 days

A few areas to think about:
Do you have mains gas, or will you need to buy bottles? Not many areas in Spain have mains gas, so you may need to buy bottles, which need to be stored securely and in some areas you need a licence. You will also need the gas installation checked every 5(?) years.
What does the property already have? Many properties in Spain only have electric heating or rely on portable gas heaters, woodburners, etc. for occasional heating. Portable gas heaters can cause condensation and rooms needs to be adequately ventilated, which is sometimes not easy in very modern properties.
What are you planning for heating? Obviously the heating requirement isn't as much as the UK, but you will still need heating from Oct - March generally. If you want traditional 'gas central heating' then that's a lot of work & expense, but still the most efficient form of heating. Alternatively, you could use portable gas heaters, air-con heating, electric panel heaters - many choices. Anything that uses electricity will cost more to run than gas as the efficiency for electricity to heat is only about 1/3 of gas to heat.
Hot water - instant hot water via gas hot water heaters or electric water heaters are common, but electric power will cost more. Do you have a solar water heater (outside cylinder with a solar panel)? These tend to lift the water to a higher temperature before the gas / electric heater kicks in, saving you money.
Cooking - most cooks / chefs prefer electric oven and gas hob, but modern induction ceramic hobs are more efficient than traditional electric hobs (although you need to check that your pans work on them - most modern pots & pans do).
The future - in the UK, from 2025 all new homes need to have a non- carbon emitting heating system, so unless the gas supply switches to hydrogen, electric powered heat pumps are required. Eventually, this will become the norm, but not for many years as heat pumps costs a lot more and governments can't afford the current subsidies. Spain and most other European countries are on the same track, using renewable electricity to power the heat pumps, so (arguably) zero emissions.

I agree with Eduardo gas bottle for hot water and cooking, bottle lasts us about a month, delivered to our door at 17e
Live here all year electric about 70e pcm
